COURSE PROGRAM

  • Definition of cuisine and chef: Historical notes, professional ethics, personnel hierarchy, and related tasks
  • Equipment knowledge (kitchen and utensils)
  • Knowledge and seasonality of raw ingredients
  • Introduction to common vegetable cutting techniques and use of standard knives
  • Condiments
  • Classic and contemporary cooking techniques
  • Stocks
  • Kitchen bases
  • Workplace health and safety
  • Food hygiene and HACCP

The role of the Kitchen Commis is essential to the efficient operation of a professional kitchen. This is a training project in the tourism sector in collaboration between Campus Principe di Napoli (Multiversity Group) and Federalberghi Peninsula Sorrentina. Participation in the training paths is free and aims to facilitate the employment of participants at the renowned hotel establishments affiliated with Federalberghi. This incredible opportunity includes blended-mode lessons, both in person and online, complemented by interactive educational workshops and internships at prestigious hotels on the Sorrento Peninsula.
