  • The Chart Creation: how the wine list should be composed, calculation of the mark-up, the contribution margin
  • The bar menu: aperitifs, after-dinner drinks, super spirits
  • The sale of water, coffee, infusions and soft drinks
  • Service: wine by the glass, sales by the bottle

Beverage management, alcoholic and non-alcoholic, is a key component of a restaurant’s revenue. Knowing how to calculate the right mark-up, manage cellar rotation, and understand the optimal composition of the beverage menu are key aspects that directly affect a restaurant’s profitability.

Tourism industry training project between Campus Principe di Napoli (Multiversity Group) and Federalberghi Penisola Sorrentina. Participation in the training courses is free of charge and aims to facilitate the job placement of participants at the renowned hotel facilities of Federalberghi Members. This incredible opportunity includes blended, in-person and online classes, flanked by interactive educational workshops and internships at prestigious hotels in the Sorrento Peninsula.
