  • Managing the restaurant brigade: the organizational chart, staffing, costs, shifts, equipment

  • Creation of Operating Procedures
  • The Sale: What to sell and when
  • Communication: Pre-service briefings, service orders, communication with other departments
  • The Management of the Customer and Complaints
  • Warehouse management: procurement, loading and unloading of foodstuffs
